Cooking the asparagus
Just the other day I bought my first bunch of spring asparagus and quickly put together an asparagus salad. I never boil or steam very thin asparagus. If they are fresh and thin, I simply pour boiling water over the bunch and allow it stand for five to ten minutes. If you have large asparagus boil of steam them until soft. I then immediately plunge these beauties into an ice bath – the result: beautiful, bright, fresh green asparagus – with a scrumptious bite.

Making the salad
Scatter the asparagus on a wooden board and sprinkle with the best olive oil, some fresh lemon juice, roasted seeds and nuts… and to top it off,add finely grate Parmesan cheese. Season with Maldon salt and a few pinches of black pepper. And there you have it… a mouth-watering, seasonal spring salad for the soul.

How to keep your asparagus fresh
Trim the ends if necessary. Fill a jar with a bit of water. Store the asparagus upright in the container. Change the water when it gets cloudy.

On my recent travels to the island of Zanzibar, chef Prabhakar Kumar from the Diamonds La Gemma Dell’ Est Hotel, introduced me to the local Kachumbari salad. It is so simple that you might start thinking to yourself…so what is the big fuss? This scrumptious salad consists of onion, tomato, cucumber and carrot and is seasoned with lemon or lime and salt and pepper. But it’s the way that you cut your veggies that differentiates this from you normal run of the mill veggie salad. It must be cut with love into very fine thin slivers. Don’t discard the pips of the tomato or cucumber – use it all. This salad is a perfect accompaniment to poached fish.

Kachumbari salad

1 onion, halved and cut it into fine slivers
1 tomato, halved and cut it into fine slivers
½ cucumber, halved and cut it into fine slivers
1 carrot, julienned
10 ml lemon or lemon juice
Salt and pepper

Mix all the veggies together then add the lemon juice and salt + pepper.

My mom used to make this side dish for us for years back in our days in the Free State…to help stave off the winter chill and provide some good nourishment to accompany a meat dish as opposed to just the ‘vleis, rys en aartapples” (meat, rice & potatoes) staple. We were fortunate enough to have a large vegetable garden in which my brothers and I had to do our time in turning the soil and tendering to the veg patch. I remember there were always these long green beans – and delicious ones too. While in matric (Grade 12) I had to lose a kilo or two so that I could fit into my matric dance dress – I was a size 10 in those days! I lived for weeks on beans and tomatoes – just cooked up, plain and simple … and fitted in my dress! The flavours have stayed with me to this day. The big secret to this simple fare is not to overcook the beans…. They still need to have a bit of a bite.

Filled with nostalgia, I made this dish once again and served it as a warm bean salad – I added some freshly ground black pepper a drizzle of the best olive oil and to complete the dish a generous squeeze of lemon juice and some twigs of parsely. The olive oil, lemon juice and parsley renders the dish into a modern veggie serving that I absolutely love. If you like, you can always eat this as a main meal with a slice or two of freshly baked bread. Just paddle the bread through some of the lovely juices….just plain delicious is what it is…unadulterated veg at its best.

Three more ideas with green beans:
Steam or boil the beans until just cooked – add some bacon and a knob of butter.
Steam or boil the beans – add salt, black pepper, a bit of garlic and a knob of butter.
Cook beans with potato and onions and flavour with salt, white pepper and a knob of butter.

Ingredients
  • 400g Green beans (ends and strings removed)
  • 300g Tomatoes, sliced
  • 200g Onions, sliced
  • 125 ml Water
  • Salt
  • Black pepper
  • Olive oil
  • Juice of ½ lemon
  • Freshly chopped parsley
Instructions
  1. Put all the ingredients into a pot with the water. Cook on medium heat for +- 5-10 minutes until all is soft and cooked - but not overcooked.
  2. Season with salt and pepper and give a generous squirt of olive oil. Mix the lemon juice and chopped parsley through and serve immediately as hot as you can.

This is just a really delicious winter sandwich that will send your taste buds into somewhat of a happy twirl. This is definitely not for someone on a strict diet but it will definitely impress all your friends and loved ones. I used three of my favourite soft cheeses – Boursin (my ultimate!!), some blue cheese and normal cream cheese. What gives this sandwich somewhat of an edge is the fact that the cheese fillings are at room temperature and the luscious mushrooms are somewhat zingy, warm and juicy. The important element in preparing this sandwich is the preparation of the mushrooms.

Here are a few tips for frying mushrooms:
1. You need to add oil and butter to your non-stick pan – the butter adds that buttery, nutty flavour to the woody flavour of the mushrooms.
2. The pan must be smoking hot – if your pan is not hot enough the mushrooms will become soggy.
3. If you are cooking a lot of mushrooms – it is a good idea to cook them in batches.
4. Season your mushrooms while frying – for me the salt and pepper get etched into the delicious graininess of the mushrooms
5. Lemon and parsley always elevate the taste of the mushroom – try it.

Ingredients
  • 6 Slices of bread
  • Butter
  • 1 Packet of micro leaves
  • Mushrooms
  • 300g Mushrooms
  • 1T Olive oil
  • 1T Butter
  • 1T Fresh thyme –leaves picked
  • Pinch of chilli powder
  • Salt
  • Black pepper
  • A generous squeeze of lemon juice (from ½ lemon or more)
  • 5g Chopped parsley
  • Cheese filling
  • (cheeses must be at room temperature)
  • 3T Cream cheese
  • 3T Boursin cheese
  • 3T Blue cheese
Instructions
  1. Prepare the cheese filling first by mixing all ingredients.
  2. Butter one slice of the bread very lightly. Divide the cheese fillings into three and add to the other side of the bread.
  3. Then prepare your mushrooms: Cook the mushrooms + thyme in the olive oil and butter in a very hot pan – season with salt and black pepper. Do not let the mushrooms become soggy; they should be a beautiful nutty and brown colour. At the end at the chilli powder, a big squeeze of lemon juice and chopped parsley.
  4. Add your mushrooms to the cheese filling side of your sandwich, top it with the delicious micro burst leaves and top with the other slice of bread. YUM!

As the African sun set over the great Sundays River, I had to pinch myself… the situation was surreal, almost sublime. There I was deep in the Kwazulu-Natal bush at the Esiweni Lodge on the Nambiti Private Game Reserve … just the day before I was at my desk doing my regular duties as communications head at a leading architectural firm, dhk Architects.

For the next 48 hours, I was to be a captive in this wilderness, a captive to my senses. It wasn’t the Big 5 wild animals that roamed the reserve that were making me nervous but the prospect and sheer excitement of meeting world renowned TV Foodie and chef, Reza Mahammad. You see, he is one of my all-time food heroes and by some stroke of sheer good fortune I spent the weekend with him on what I could only describe as a culinary safari of sorts. It was such a fabulous opportunity that I could hardly contain myself. I was there representing Food24 but the truth be told I was more excited than a little girl on big red school bus venturing off to class for the very first time.

The lodge had embarked on a series of culinary safaris where guests would be invited to cook and share the food of well-known chef’s and personalities. It is a good formula and offers an enchanting yet educational break from the humdrum of our daily lives.

Reza Mahammad joined us later the Friday evening jetting in from Cape Town where he was promoting his new TV series. In his latest series, Reza’s African Kitchen, he explores African cuisine, from the spicy Indian influences of Zanzibar, to the indigenous dishes of Botswana, Namibia, Zambia and South Africa. Reza goes on horseback safari, tiger fishing, gets friendly with ostriches, herds sheep, snorkels and more all in an unsatiable endeavour to uncover the diversity of flavours and fabulous ingredients which populate the food heritage of Southern Africa. Back in his own breath-taking African kitchen, Reza uses his travels as inspiration to create his own delicious dishes with a spicy Indian twist!

But now back to the Friday night at the lodge – I was anxious, apprehensive and excited – the spirit of this man and his culinary talents preceded him. Yet, it was odd, I loved the work of this chef before I had even met him…But after spending two days as an apprentice-like food groupie of sorts, I was hanging around his apron tails for the better part of two days … I think I can call him friend. What an individual! What a down to earth talent and yet of such humble and generous spirit. Reza is exactly the way he is on television – open, full of laughter fun and excitement – but what strikes you almost immediately is his dedication and enthusiasm for his work his passion and his food. He started in the kitchen at 6am with Damon (Esiweni chef) in the morning to prep for our workshops – and finished that evening with dessert just before 9.45 pm. To say he is a workaholic would be somewhat of an under exaggeration. Where the energy and passion comes from can only be put down to his deep love of his craft. A craft of which he is a master. He is so proficient – even almost belligerent in the best of ways, he never uses any measuring equipment – it is just a dash of this, a sprinkle of that a few spices here… and there you go – another Reza creation. There are neither airs nor a graces about this man, he preps, cleans and chats and somewhere in-between these masterful dishes just seem to appear.

Through it all we laughed till our bellies were sore, we chatted about food and tips and his new ventures and adventures. We sipped on this, savoured that and let ourselves get lost in this wilderness of food, flora and fauna.

My lodgings for the next two days was an opulently furnished suite perched high above the meandering Sunday’s river. It was a citadel in the sky, luxurious and just too beautiful all at the same time. My cliff-top chalet had its own private deck with just the most magnificent, sprawling views. I need’nt have gone anywhere and could have sat for the entire weekend sipping endless G&T’s in the rim-flow pool taking in the breathtaking vista and just talking to myself and the animals. I would have done so if it were not for the scheduled game drive which took us into the veld to explore God’s beautiful creatures in the cool of the setting sun.

There were elephants, birds, strange sounds and nature-filled silences, the rustle of bushes and fluttering heartbeats. From the exotic to the unusual – these wild and wonderous creatures seemed to linger in balance around the environs of the lodge. There were no doubt many more creatures wandering around the greater reserve. But the most amazing thing of the lodge was its people – their motto is you come as guests and you leave as friends – it’s so true. The managing couple Natie and Magda are such an engaging and exceptional couple who exude the finesse and hospitality that brings the real charm to this natural hideaway.

Food

I learnt loads of interesting things which I will share in future in my future blog posts. But for now, one of the workshops that we did with Reza on the Saturday is what I want to share ….it is this amazing dish called Paupillette of Lemon Sole with saffron sauce. This dish epitomises Reza’s love for the “Frindien” cuisine, combing classic French food with an Indian twist. This is a not an easy task but this genius does it so brilliantly – this dish not only looks elegant and refined, but the taste is subtle yet complex. The white fish contrasts beautifully with the yellow sauce. This is a perfect dish to impress the best – without having to slave for hours in the kitchen. Don’t be alarmed by the list of ingredients because the preparation is actually quite straightforward. As Reza said – “ don’t get overwhelmed by the ingredients – read the method first – then you will find it easy to cook my recipes’.

Serves: 6
Ingredients
  • Paupillette of Lemon Sole with saffron sauce
  • Serves 4
  • 6 x 140 – 160g fillets of lemon sole, trimmed, skinned and filleted
  • 150ml dry white wine or Vermouth
  • For the filling
  • 300g raw prawns (net weight, after being shelled and de-veined)
  • 1 tsp grated ginger 2 tbsp finely chopped chives
  • 1 tbsp finely chopped dill 1 tbsp finely chopped coriander
  • Zest of 1 lemon plus juice of ½ a lemon ¼ tsp roughly crushed fennel seeds
  • ¼ tsp chilli flakes salt to season
  • For the Sauce
  • 2 tbsp rapeseed (canola) or vegetable oil1 tsp fennel seeds
  • 2 shallots, finely chopped 2 cloves crushed garlic
  • 1 tsp grated ginger 1 chopped green chilli
  • ½ tsp saffron 1 tbsp. chopped coriander
  • 200ml double cream salt to season
Instructions
  1. To make the filling - Blitz the prawns coarsely in a food processor. Decant into a bowl and mix in all the remaining ingredients. Divide into six portions and set aside.
  2. Place the sole fillets, with the side that had the skin face up. Lightly season with salt and pepper.
  3. Place a portion of the prawn stuffing on the fillets. Roll the fillets, starting with the thickest part and finishing with the tail.
  4. Place on a roasting tray and pour the dry white wine or vermouth over the fish.
  5. Cover with a grease parchment paper and place in a preheated oven at 180C for 10-12 minutes until the fish is tender.
  6. To make the sauce - Whilst the fish is in the oven, heat the oil in a pan until hot. Add the fennel seeds and allow them to pop for a few seconds. Add the chopped shallots, garlic, ginger and finely chopped chilli. Reduce the heat to medium.
  7. Cook until the onions are soft and transparent.
  8. Once the fish has finished cooking, remove the soles from the oven and pour the juices from the roasting tray into the sauce. Set the fish aside, cover and keep warm.
  9. To the sauce, add the saffron and coriander. Reduce the liquid to half so the flavours intensify. Add the cream and continue to cook for a couple of minutes until the sauce has thickened, become glossy and coats the back of a spoon.
  10. Strain through a fine sieve, and squeeze out all the juices to maximise the flavours. Adjust seasoning.
  11. To plate up - Cut the sole into halves, allowing 3 halves per portion. Arrange on a plate with the sauce around.
  12. Serve with the glazed carrots with maple syrup and mustard seeds.

Pork Sausage and Mushrooms

We all love pork sausages – it’s one of my husband’s ultimate favourite things to eat. The frustrating thing about pork sausages is that although they have this thick casing around them, they generally burst open … furthermore all the juicy flavours and brownness from the pan stays on the skin. For those that are like me … we generally tend to rip the skin off and set it to one side – and there goes the flavour with the skin! Well I have now worked out how to perfectly fry a sausage without it breaking or bursting or skin and with loads of flavour – I want to share this with you today … it will change your entire outlook on pork bangers!

1. Firstly add the sausages to a pan with a little water – about a cup of water for 6 sausages – put the lid on the pan and simmer for 10 minutes.
2. Then put the sausages into cold water and take the casings off.
3. Now put some butter and olive oil in a pan, add the sausages and fry till golden brown – perfect!

I decided to serve these porkies with lovely mushrooms, thyme and lemon. The lemon cuts through the richness and its perfect just with a piece of bread on the side. Enjoy!

Ingredients
  • For sausages
  • 6 Pork Sausages
  • +- Cup of water
  • 20g Butter
  • 1T Olive oil
  • For mushrooms
  • 400g Mushrooms sliced – I love a variety of different mushrooms
  • 30g Butter
  • 1T Olive oil
  • Handful of fresh thyme
  • 1 Lemon
  • Salt
  • Black pepper
Instructions
  1. Cooking the sausages - Add the sausages to a pan with water – put the lid on and simmer for 10 minutes. Then put into cold water to cool it down - remove the casings. Now put the butter and olive oil in a pan, add the sausages and fry till golden brown and perfect!
  2. Cooking the mushrooms - Add half the butter, oil, mushrooms and thyme in a very hot pan. Season with the salt and pepper and fry till golden brown. Do the same with the next batch. Squeeze the lemon juice over the mushrooms when done.
  3. To serve - Put the mushrooms in a serving dish and add the sausages – serve with some fresh bread.

Here is something simple for you to try this Christmas – a TWO MINUTE stick blender mayonnaise. Most foodies know this fool proof method but I am surprised at how many people still use the old drop-for-drop-oil-method.  The big secret behind this recipe is to add the ingredients in a narrow vessel/container in the right order…  egg + oil – this is critical. Let the ingredients settle  for a minute – then put your stick blender carefully on top of the egg yolk – the blender must touch the bottom of the container … then only then start blending until the mayonnaise starts emulsifying. S-L-O-W-L-Y pull the stick blender up to complete the emulsification process.

Here is a video clip to show you how easy it is to make your very own homemade mayonnaise.  Make a cupful or a bucketful, its fresh and fantastic. Its creamy and dreamy and perfect with just about anything…salads + potatoes + dips.

Ingredients
  • 1 egg yolk
  • 1 Cup sunflower oil (250ml)
  • For seasoning
  • ¼ – ½ t salt
  • freshly ground black pepper
  • 1 big squeeze of lemon juice
Instructions
  1. In this specific order - place the egg yolk in a tall container or jug, then add the oil.
  2. Place your stick blender right on top of the egg at the bottom of the jug and start blending until the mayonnaise starts emulsifying. SLOWLY pull the stick blender up to complete the emulsification process.
  3. Season with salt, pepper and lemon juice and serve.

Sometimes life just stumps you.  Such was the case when these absolutely, incredibly, beautiful and delicate garlic scapes found their way into my kitchen and onto my plate. A friend of mine, Daleen gave me a bunch of these green little wonders and said that I needed to cook something with it. But there I was, utterly stumped.  What was I going to do with these culinary flowers?  They belonged in a pretty flower vase on the window sill surely?  At first I thought the little buds on these slender green shoots were “onion flowers” and then with a wicked smile, Daleen informed me that they were actually garlic scapes or garlic flowers. I had never seen these little miracles before …Clearly, I need to get out more… Anyway, these flowers were just so fragile and perfect – long leafless stems with the little closed flowers on the top – and inside the flowers were the seeds of the garlic plant.  It was another wonder of creation.

But how and what could I do with these edible creations?  As always my weekly food journey starts with the world’s greatest encyclopedia, the internet. I read that the flower of the garlic plant is sometimes eaten and that it has a much milder flavour than the actual garlic bulbs. I read further that these seeds were mostly consumed while immature and still tender. This seemed to make some sense as the bottom part of the stem was rock hard. These stalks will be great in soups and stews.

I don’t know why but my mind took me to Asia when I saw them … a dish of greens and pork. That is what I eventually decided to do…. My secret for this recipe was to keep everything simple.  The idea was to let the subtle garlic scapes infuse with lemon and then just let this flavour the greens and the pork.   The delicate simplicity of the flavours makes this a genuinely blissful, if not whimsical combination. Garlic scapes are available in stores at the moments – so please try it – it’s both fun and delicious.

Ingredients
  • For the pork
  • 300g Pork fillet
  • Juice of one lemon
  • 1T Soya sauce
  • Black pepper for seasoning
  • Salt – if you need extra seasoning
  • Oil for frying in pan
  • For the garlic scapes
  • 4-6 Garlic scapes (keep some whole and have some cut in halves) - use only a small piece of the stem and the flower
  • 2T Butter
  • Fresh juice from ½ lemon
  • A bit of white wine - +- 50ml
  • Salt and pepper for seasoning
  • For the Asian greens
  • Asian greens for two people - I went to the Chinese market and got a variety of greens i.e. bok choy
  • 1-2T Soya sauce
  • Oil for frying
  • Fresh juice from one lemon
  • Lemon infused olive oil to drizzle over your dish when cooked
Instructions
  1. For the pork: Add the oil to the pan and sear the fillets.
  2. Then add your seasoning - pepper + lemon juice + soja sauce - fry the pork fillets on medium high heat till done.
  3. Make sure your fillets are properly cooked through - but do not over cook. Add a bit of salt if you like.
  4. For the scapes: Add butter to a medium hot pan.
  5. Braise the garlic scapes till soft in butter and wine. This will take about 10 minutes.
  6. Add the lemon juice and some salt and pepper for seasoning.
  7. For the other greens: Heat a wok until it is very hot – add the oil and then the greens.
  8. Flash fry the greens for a few minutees and add the soya sauce + lemon juice + pepper.
  9. Taste for seasoning.
  10. To serve: Add the greens to the plate.
  11. Cut your pork and put that on top of the green.
  12. Drizzle the juices of the pan over the pork + drizzle some lemon infused olive oil over the whole dish.
  13. And then place some garlic scapes on top.

My mom, Babs, is in her eighties, extremely healthy and has been a size 10 her whole life. She is one of those “odd” people who does not like butter, cream, fatty foods, deep fried foods, chips and crisps or anything unhealthy and then she also does’nt like too much spices either – not like her not-so-small-foodie-wine-drinking-spice-loving-daughter! Lean proteins, huge salads, vegetables, different kinds of fruit and whole grains are part of her daily regimen – washed down with a cuppa tea or two or ten – and then … always a healthy strong whiskey every single night. I have to admit though that she has been prone to a bit of strong cheese and a dash of olive oil here and there just to keep the body parts in good working order.

So when Babs comes to visit I have to cook something healthy and therefore for our Sunday lunch recently I prepared a chicken breast covered in fresh herbs, some stem broccoli and I served it on parmesan + lemon flavoured pasta. It was delicious, fresh with a light and dreamy springtime flavour… but most importantly … mom approved. Enjoy!

Ingredients
  • For the chicken
  • 4 Skinless deboned chicken breasts
  • 1T Olive oil
  • 1 Clove garlic – peeled and sliced in 4 slices length ways
  • 2 T Fresh coriander – chopped
  • 2T Fresh parsley – chopped
  • 1T Fresh basil – chopped
  • 1 Lemon
  • Salt
  • Black pepper
  • For the spaghetti
  • Cook enough spaghetti for 4 people
  • 2T Olive oil
  • 75g Grated parmesan cheese
  • 2T Fresh parsley – chopped
  • 1 Lemon
  • Salt
  • Black pepper
  • For the stem broccoli
  • 4 or more stem broccoli
  • Salt
  • Black Pepper
  • Drizzle of olive oil
  • Squeeze of lemon juice
Instructions
  1. Chicken: Make small incisions into the chicken breasts and insert a sliver of garlic into each breast.
  2. Drizzle with a bit of olive oil and season with salt and pepper.
  3. Mix all chopped herbs together – parsley, coriander and basil.
  4. Then press the breasts in the fresh herbs – so that the herbs coat both sides of the chicken breasts.
  5. Using a non-stick pan fry the breasts till done – while frying squeeze a bit of lemon over the chicken.
  6. When done put aside.
  7. Pasta: Add the parmesan, olive oil and lemon in a bowl – mix well and add to the cooked pasta.
  8. Then mix the parsley through.
  9. Taste the pasta for seasoning – add some more salt and add the black pepper.
  10. Stem broccoli: Cook as per packet instructions – normally only 3-4 minutes.
  11. Immediately put in a bath of ice water.
  12. After a while, warm the broccoli up again in the same pot you have cooked them – add a drizzle of olive oil, lemon juice and season with salt and pepper.
  13. To assemble: Place the cooked pasta the bottom of the bowl. Add the stem broccoli and then the chicken breast. To serve, add another drizzle of olive oil and a squeeze of lemon and parmesan shavings.

Fish – I just love fresh fish. But… I am a “no fuss fish” person – I am not one for these complicated fish recipes…the simpler, the better. Just baked or grilled or with the some subtle flavourings of lemon and herbs or just cooked whole over the coals – that’s my preference.

My most memorable meal consisted of fish. I recall so vividly the time I spent in Istanbul, Turkey…I had the most dreadful case of bronchitis and was feeling significantly sorry for myself. I was ambling along the Bosphorus River when I smelt this amazing aroma…. A local fishing boat was tied up alongside the pier and the fishermen were selling freshly grilled fish on ciabatta bread, with just a squeeze of lemon juice. A bite … and at that moment I felt so much better and I knew someone loved me.

She is such a wonderful woman with the most beautiful smile and is always there to deliver ONLY the freshest of fresh fish to you! You simply cannot get better than that.

This past Saturday, down at the market, Julie recommended that I sample two little Pangas (Pterogymnus Laniarius its Latin name and it’s also on the sustainable green list). I decided to combine the fish with real Mediterranean flavours of olives, origanum, tomatoes and lemon. This dish reminds me of Turkey – and all the wondrous colours, sights, sounds and smell of the Mediterranean. It makes me feel loved and happy.

Ingredients
  • 2 Small whole fish - I used Panga +-500g each
  • 2 Cloves garlic sliced
  • Olive oil for drizzling over the fish and at the bottom of the baking tin
  • ¼ t Dried origanum
  • 1 Lemon, sliced
  • Juice of one lemon
  • 1 Bunch of spring onions
  • Olive oil
  • 250g Cherry tomatoes
  • 100g Calamata olives
  • White pepper for seasoning (I love white pepper with fish)
  • Salt for seasoning
Instructions
  1. Preheat oven to 200 °C.
  2. Pat fish dry with kitchen towel.
  3. Make small incisions into fish, placing the sliced garlic in the slits + fill the tummy of the fishes with olives, spring onions and sliced lemon.
  4. Drizzle with olive oil and season with origanum, salt and pepper.
  5. Add the rest of the ingredients to the pan and drizzle with olive oil and sprinkle with salt.
  6. Bake for 20 minutes with foil on or closed.
  7. Turn the oven onto grill, remove the foil + squeeze the lemon juice over and grill for 5-10 minutes.
  8. Serve with a fresh salad and bread.
  9. Enjoy its delicious.
